This is a vegetarian version of the Radisson Burger that you can easily make at home. This week our chefs show you how to get creative with simple ingredients to create a vegetarian burger that you will love.
Coco veggie burger:
- 1 lb coco boiled in coconut milk
- 1oz red onion
- 1 oz corn kernels
- 1 oz cooked black beans
- 2 tsp olive oil
- 1 tsp minced garlic
- 1 oz cilantro
- 1 oz chick peas
- 1 tsp salt
- 1 tsp pepper
- ½ tsp cayenne pepper
- 1 egg white
- 1 cup flour, 2 cup eggwash, 2 cup bread crumbs (for breading patties)
Preparation:
Step 1
In a medium fry-pan add olive oil then sauté onion, corn, black beans, garlic, and chickpeas for 1 minute at medium heat.

In a large metal bowl, combine well boiled coco, cilantro, and sautéed veggies with 1 egg white. Season with salt, pepper, and cayenne. Make 4oz patties out of the mixture. Bread the patties with flour first, egg wash second, and then bread crumbs.
Step 3
Grill burgers patties, flipping once, until cooked to desire doneness, for about 10 minutes total. During the last minute of cooking, top burgers with garlic butter.
Step 4
Combine ketchup, mayonnaise, and pesto paste in a bowl. Paste over the bun before you assemble your burger. Serve with cassava fries.
