Radisson chefs host the Creative Caribbean Cooking Show every week. The show airs on Channel Five on Wednesday nights at the end of the news. Here you get tips on how to prepare meals the way we do. These are uncomplicated recipes, very easy for you to try at home.

Pub-style lobster tail:
- 1 -5oz lobster tail (split)
- Dash of olive oil
- Lime/Garlic/salt/pepper to taste
- 3oz chili paste
- ½ oz soy sauce
- 2oz coconut milk
- 3 oz yellow cheddar cheese
- 3 breaded fried onion ring
Direction: Season lobster with lime, garlic, salt, and pepper. Pan sear the tail on medium heat for 4 minutes each side, then remove from the pan.
In the same pan add chili paste, soy sauce, and coconut milk. Cook for 3 minutes. Bring back the lobster to the pan. Top with cheese and cook until it melts. Garnish with fried onion rings, and serve with mash potatoes.
