Jerk Shrimp

We do not use the term ‘mouth watering’ loosely, however, this meal can easily be described in just those words! Here’s how to make it happen in your kitchen.

Jerk Shrimp Belizean Style with Papaya Salsa

Ingredients

Papaya (peeled and finely chopped)

½ cup finely Chopped Onions

½ cup finely chopped avocado

2 Tbsp. freshly chopped cilantro

1 Tbsp. fresh lime juice

1 tsp sugar

¼ tsp salt

2 lbs unpeeled large raw shrimp

1 red onion cut into ¼ inch thick Slices

2 Tbsp olive oil

3 Tbsp Jamaican Jerk Rub

Instructions

  • Combine first 7 ingredients in a medium bowl
  • Peel shrimp, leaving tails on: devein. Toss shrimp, onion, and oil in a large bowl. Sprinkle with Jamaican jerk rub and toss to coat . Grill shrimp and onion over medium high heat (350 – 400 degrees) for 6 minutes or just until shrimp turns pink turning once.
  • Chop onion and add to salsa mixture stirring gently.
  • Serve the shrimp with salsa and rice
