Conch in Pumpkin and Coconut Sauce

Radisson’s Creative Caribbean Cooking Show airs Wednesday nights following the News on Channel Five. The Chefs at the Radisson are happy to share our recipes with you. Here’s a simple recipe to prepare Conch in Pumpkin & Coconut Sauce. We hope you try it, and enjoy!

Curry Conch


1 lb conch steak

15 oz milk

¼ lb pumpkin

1 large onion, finely chopped

1 red bell pepper

1 yellow bell pepper

1 orange bell pepper

2 stalks scallions, finely chopped

Pinch of thyme

Hot pepper

Salt and black pepper to taste



In a saucepan combine coconut milk with pumpkin, onion, bell peppers, scallion and garlic. Add all other remaining ingredients to the saucepan and cook over medium heat until pumpkin begins to dissolve, (about 10 minutes), sauce begins to thicken, and conch is tender. Season with salt and pepper to taste.

Serve with White Rice.
