Tapau served with White Rice , Fried Fish and Conch

1 Grated Coconut
2 Lbs Fish
1lb Coconut
1lb White Rice (Cooked)
1 tsp. Salt
½ tsp. Black Pepper
1 Tblsp. Malher
½ tsp. Malher
3 Basil leaves

Clean both conch and fish, and season with salt and black pepper. Let it marinate. Peel the bananas and cut in four pieces, place banana in water so it doesn’t get black. Take grated coconut, add some water, and squeeze coconut milk out of the grated coconut.

Combine banana and coconut milk.  Season to taste with a little salt, and bring to a boil. Cook for 15-20 minutes until banana is soft. Add conch and cook for about 2 minutes. Fry or steam fish in coconut milk mixture and let it simmer. Serve this with white rice or you can also serve with cassava bread.
