Beef Sirloin in Puff Pastry

Ingredients for Tenderloin

Salt
Black Pepper
Fresh Garlic
2lb Tenderloin

Mix all ingredients together in a bowl and use as seasoning for the tenderloin. Marinate for 4 hours. Sauté to medium rare.

Puff Pastry Dough

2 cups flour
1/2 lb butter
1 Tbsp. salt
3 Cups water

In a bowl place flour, butter, and salt. Mix together. Add water to form into a dough. Place dough on plastic wrap and refrigerate for 40 min.

Roll out dough and rub with some butter. Place on plastic wrap and refrigerate for 30 minutes more. Repeat this process two times.

Baking Process.

Roll out dough and place sautéed beef in it. Cover. Brush dough with egg and bake for 25 minutes.

​Recipe for Red wine Reduction

1/2 Cup red wine

Put the red wine in a sauce pan on medium heat. Add a pinch of sugar and rosemary and heat until desired thickness.
