Snapper Al Ruben

Ingredients

2 Pieces of 4 oz. Snapper Fillet

Pinch of salt

Pinch of black pepper

1 Tsp. Fresh Garlic

½ Cup Carrots

½ Cup Chopped Red Bell peppers

½ Cup Chopped Yellow Bell peppers

½ Cup Chopped Green Bell Pepper

Olive oil

Butter

¼ cup fresh lemon juice

1 Medium size potato

1 Small garden Salad

Method

Clean and wash fish fillet. Season with salt, black pepper and garlic.

Place frying pan on stove top and add olive oil. Let heat.

Add fish and fry until golden brown, remove and set aside.

In another frying pan heat butter. Add lemon juice and vegetables and sauté until tender

Place potato in oven and bake until tender.

Make a sandwich with the fried fish fillet and top with the vegetables

Serve with baked potato and garden salad.
