Whole reef Snapper

1lb sweet potato
1lb Yampi
1lb potato
½ Callaloo
1 cassava bread
½ spinach
½ butter
1 ½ garlic

Preparation

Take whole fish clean and wash with lime. Season with salt and paper to taste on 2 sides. Stuff with Callao, garlic, butter and basil. Bake for 15-20 minutes at 350 degrees and serve on bed of cassava bread, Yampi and sweet potato.
