This week on Creative Caribbean Cooking, Chef Delvo Banner prepares her rendition of Pineapple Pork. She serves it up with some coconut white rice and mashed ripe plantains with a side of fresh avocado.
2 tbsp olive oil
1 lb pork chops
1 onion finely chopped
1 jalapeño chilies finely chopped
1 lb pineapple chunks
1 fresh mint leaves, chopped
1 cup chicken stock
Salt & black pepper
1. Heat the oil in a large frying pan and sauté the pork in batches until the cubes are lightly colored.
2. Add the chopped onions, red pepper and the chilies to the oil remaining in the pan. Sauté until the onion is tender then add the pine apple. Stir to mix
3. Add the mint, then simmer gently for about 5 minutes or until pork is tender.
4. Season to taste, garnish with fresh springs of mint and serve with rice.
