Here is the latest recipe used on our Creative Caribbean cooking show with Chef Delvo & Chef Ainsley. It was lots of fun filming this particular show and as you can see, the guys from Channel 5 really enjoyed it too.
1 leg of lamb
4 garlic cloves, crushed
1 tsp ground cumin
2 tsp ground annatto
2 tsp paprika
1 tsp oregano
3 tsp olive oil
3 red bell pepper
14 oz can black eye beans
1 tsp dry white wine
1. Weigh the lamb and calculate the cooking time for medium cooked lamb. Allow for 20 minutes
2. Mix the garlic, cumin, annatto, paprika and oregano in a bowl. Stir in half the olive oil using spoon.rub the paste all over the lamb. Cover and laminate
3. Preheat the oven to 350 F. Place the lamb in a roasting pan with the pepper and beans. Pour in the wine and drizzle with the remaining oil. Season then roast for the calculated time. Check occasionally by adding some water if the vegetable begin to dry out.
4. When the lamb is cooked, removed from the oven and cover the meat loosely with a foil. Leave to rest for 15 minutes then served with rice.
