Whole Snapper with Tapenade Sauce

 FISH Dinner


  • 1 Whole Snapper
  • 1 tbls. Black Olives
  • 1 tbls. Capers
  • 1 tbls. Olive Oil
  • 1 lemon for juice
  • Salt and Pepper (to taste)
  • ½ Tomato
  • ½ Onion
  • Cilantro (to taste)


Preparation steps:

Fillet the Snapper on both sides, then marinate for 25 minutes in lime juice, salt, pepper, and blended cilantro.
Pan-fry the fish on both sides for 3 minutes each side in 2 tablespoons olive oil and 2 tablespoons butter in medium heat.  If fish is not fried through then place it in the oven for about 3-5 minutes at 350°.

Tapenade Sauce
Combine all herb and vegetable ingredients and add to fried fish fillet.

This could be served with yellow rice.
