Vegetarian Pasta


16oz Penne Pasta
¼ cup extra virgin oil
2 ½ cup died tomatoes
½ cup fresh chopped basil or 2 tsp dried basil
2 tsp minced garlic or ½ tsp garlic powder
1 cup chicken broth
Salt & pepper to taste
½ cup grated Parmesan cheese
½ cup spinach

Preparation steps:

Cook penne pasta
Drain, cover and set aside
Heat olive oil in large skillet
Add tomato, basil, garlic and chicken broth, simmer for two minutes
Toss hot pasta with sauce, mix well
Salt and pepper to taste
Sprinkle with Parmesan cheese and serve.
