Grilled Chicken with Citrus Salsa


1 Jalapeno pepper thinly sliced
1 Jalapeno pepper minced
5 Tblsp. Fresh lime juice
4 Boneless skinless chicken breast
Salt and freshly ground black pepper to taste
Navel orange peeled, sectioned and cut into ¼ inch pieces
1 Small grapefruit peeled, sectioned and cut into ¼ inch pieces
4 Scallions white and pale, green parts, thinly sliced
10 Tomatoes diced
½ Orange zested
¼ Cup fresh cilantro chopped
1 Onion
1 Sweet pepper

Preparation steps:

In a shallow bowl, combine jalapeno slices with ¼ cup each of the lime juice and olive oil. Rub chicken with slat and pepper
Add to marinade. Marinade in a refrigerator for at least 30 minute
In a medium bowl , combine orange, grapefruit, scallion, tomato Onion, sweet pepper, remaining tablespoon each lime juice and olive oil, zests, salt and pepper, diced jalapeno. Set aside.
Remove chicken form marinade. Cook on hot grill for about 5 minutes on each side, or until cooked through. Remove from the grill and let stand for 5 minutes.
Divide greens among fried chicken and arrange it on top of greens. Spoon salsa over each topped chicken
