Caribbean Pork Chops

Ingredients:

  • 1 – 8 oz. un-cooked yellow rice
  • 2 1/2 cups water
  • 4 – 1/2 inches thick pork chops
  • 1- 3 oz. seasoned coating mix for pork
  • 1 1/4 cups green sweet pea
  • 2 tbsp oil
  • 1 1/4 cups chopped onion
  • 1 cup frozen chopped onion
  • 1 cup fresh cilantro leaves
  • 2 firm ripe bananas, peel thinly sliced
  • 2 chopped green chilies
  • 1 – 1oz jar roasted bell pepper, chopped
  • 1/2 tsp curry powder
  • 1/2 tsp crushed red pepper flakes
  • 1/4 tsp dried shredded orange peel
  • 1/3 cup orange juice

Preparation steps:

  1. Pan Fry the pork chops and cook vegetables. Place on top of pork chop
  2. cook onions, cilantro and banana, cook 3 minutes
  3. Spoon rice into plates, top each with pork chops and banana mixture
  4. cook peas and stir into rice
